Is Cabbage Keto?

Green, raw cabbage has 5g total carbs and 3g net carbs per 1 cup serving. Most people eating keto stay under 20g – 50g net carbs per day. Cabbage is a low-carb vegetable and is suitable for the keto diet.

Are Cabbage Rolls Keto?

Traditional cabbage rolls originate in Europe and are made with meat and rice wrapped inside cooked cabbage leaves. Rice is very high in starchy carbohydrates which makes these cabbage rolls not keto-friendly. However, this is easily mitigated by removing the rice from the recipe. You can also replace the rice with a low-carb alternative such as cauliflower rice instead.

In this recipe, the rice has been completely omitted. You could however easily add cauliflower rice if you wanted to. Simply use a cheese grater to grate your head of cauliflower and toss it in with the ingredients in the final step of this recipe.

Can I Use Purple Cabbage to Make Cabbage Rolls?

Technically, yes. Purple cabbage can be used to make cabbage rolls. The flavor profile difference between green and purple cabbage is slight, so it's easy to substitute.

Using purple cabbage in this unstuffed cabbage roll casserole would also work as well. The dish won't look the same as if you used green cabbage, but the taste is similar and the macros are identical.

Like any food dish, I recommend keeping this recipe in the fridge no longer than 5 days.

Can I Freeze Keto Unstuffed Cabbage Roll Casserole?

You can, but be aware that when you thaw and reheat it, the cabbage may be a bit mushy.

If you know you are planning to freeze some of this recipe when you are making it, don't add the cabbage to the beef and only mix it in before adding it to the casserole dish to bake.

This will cause the immediate result to have crisper cabbage, but the re-heated result after being frozen will be much better. This is completely up to you what you prefer.

What to Serve with Keto Unstuffed Cabbage Roll Casserole?

Honestly, I eat this as a complete meal! It has a great proportion of fat, protein, and carbs. I sometimes even add a little shredded parmesan cheese on top if I have some leftover from making Macadamia Nut Pesto.

If you're set on serving this meal with a side dish, I recommend a light side salad just for a little contrast in flavors. You could use this Green Goddess Dressing and add a few low-carb veg as well.

Homemade Low Carb Tomato Soup – Campbell's Tomato Soup Keto Copycat

When I was first thinking of making a lazy cabbage rolls dish, I knew I would have to get creative with some of the ingredients. Omitting the rice that's found in traditional cabbage rolls is easy to do. But the recipe I have previously used calls for 2 cans of Campbell's tomato soup.

Did you know that one can of Campbell's tomato soup has 45g NET carbs?! And 50g total carbs?! That's wild.

However (from what I remember – I've been keto so long) the taste was phenomenal. I had to replicate it. A couple of important notes:

Keto-Friendly Sweetener

One of the tricks of Campbell's tomato soup is that it has a sweet quality. I use Lakanto sweetener to achieve that sweetness in this recipe; it works perfectly. Because erythritol and monk fruit have a glycemic index of 0, they don't affect your blood sugar the way other sweeteners do.

Erythritol does document 4 total carbs per teaspoon, which I have included in the macro calculations in the recipe card. However, feel free to add more to the soup if you like it sweeter as this carb count is actually left out of most total calculations due to their absent effect on the body. This ingredient is really almost a freebie.

Tomatoes

This recipe uses 1 pound of tomatoes, which is equal to about 4 medium tomatoes.

I used fresh tomatoes in this recipe and diced them roughly before adding them to the saucepan to make the soup. You could substitute canned tomatoes; however, it will slightly change the taste.

Heavy Whipping Cream

I added a few tablespoons of heavy whipping cream to this soup to bump up the flavor profile. If you're dairy-free, feel free to omit this ingredient as the rest of the recipe is already dairy-free!

Using This Recipe for Cabbage Rolls

The greatest thing about this cabbage roll casserole is that it takes half the time that traditional cabbage rolls would take. We all need easy recipes for busy weeknights, and this lazy cabbage roll version is much faster than regular cabbage rolls without compromising taste.

That being said, if you DO want to use this recipe to make regular cabbage rolls, follow these directions:

  • Pluck the leaves from your cabbage in full. Cook in boiling water until tender and malleable. Remove immediately and cool.
  • Cook and season ground beef as directed in this casserole recipe.
  • Make homemade low carb tomato soup as directed in this casserole recipe.
  • Stuff cooked cabbage leaves with beef mixture. Arrange in casserole dish. Top with low carb tomato soup. Bake in the oven at 350◦F for 25 minutes.

Homemade Low Carb Tomato Soup

  • 1 pound diced tomatoes 4 medium
  • 1 small white onion diced
  • 1 clove garlic minced
  • 1 tbsp avocado oil
  • 2 tbsp tomato paste
  • 3 tsp erythritol monk fruit Lakanto
  • 3 cups low carb vegetable broth
  • 1 tsp salt
  • pinch black pepper
  • 2 tbsp heavy whipping cream optional

Lazy Cabbage Rolls

  • 5 cups chopped cabbage 450g
  • 750 grams ground beef 1 2/3 lbs
  • 1 tsp salt
  • 1/2 tsp Italian seasoning
  • pinch black pepper

Homemade Low Carb Tomato Soup

  • Dice onion and mince garlic. Heat avocado oil in a large saucepan and sauté until fragrant, about 2 minutes.

  • Add tomatoes, tomato paste, sweetener, salt, and pepper. Cook until tomatoes begin to break down, about 7 minutes.

  • Add vegetable broth. Stir. Add heavy whipping cream. Stir.

  • Turn the heat down and keep on a low simmer.

Lazy Cabbage Rolls

  • While the tomato soup is simmering, brown the ground beef. Seasoning with salt, pepper, and Italian seasoning.

  • Chop the cabbage and add to the beef once fully cooked. Reduce heat and stir occasionally, allowing the cabbage to reduce.

Unstuffed Cabbage Roll Casserole

  • Preheat the oven to 350°F. Pour beef and cabbage into a large casserole dish. Cover with homemade low carb tomato soup and mix well. Bake uncovered in the oven for 25 minutes.
